Potato Skins

Source: Simona's ideas Ingredients: - Yellow Potatoes (2-3 / person) - Salt - Pepper - Cheese (grated) - Sour cream (for garnish) - Chives (for garnish) - Bacon bits (optional, for garnish) Instructions: Wash potatoes well, with a brush (don't peel). Cut in halves, scoop the inside with a spoon (you can make mashed potatoes with the scooped content). Preheat oven to 400F. Put potatoes (sprinkled with salt & pepper in a lined pan, cut side up, for 30 minutes. After, raise the temperature to 425F and leave them for 10 more minutes. In the last minute put the grated cheese on the potatoes. Take them out and let them cool down for 10 minutes, serve with sour cream and chopped chives (optional bacon bits).
