Smash Burger

Ingredients:
- 1 lb regular ground beef
- 1 lb extra lean ground beef
- Sauce: 1/3 cup mayo & 1 tsp yellow mustard
- Cheese slices
- Potato buns
- Lettuce
- Pickles
- Tomatoes
- Red onions
Instructions:
Mix ground beef well, divide into 6 balls, flatten and refrigerate until ready to cook.
Make sauce (stir mayo & mustard together). Prep toppings.
Lightly butter cut side of buns, toast on griddle or skillet.
Season cold patty with salt and pepper, spread a dab of sauce and put patty with that side down on griddle, press with burger press until very thin.
Repeat for the other 5 patties. while they are searing, season the other side and spread sauce. Flip patties.
For the last minute, place a slice of cheese on top to melt.
Serve warm over toasted buns with toppings.
