Apple Bread

Ingredients:

- 2 cups of grated apples (about 4 apples) - this can be replaced with the same quantity of grated carrots for carrot bread

- 1 tsp baking soda

- 2 cups sugar (not all the way full)

- 1 tsp cinnamon

- 2 cups flour

- 2 eggs

- 1/2 cup oil

- 1 tsp baking powder

- 1 tsp vanilla


Instructions:

Mix the grated apples with the baking soda, sugar and cinnamon, let it rest for an hour, mixing from time to time.

Preheat oven to 375. Add the flour, eggs, oil, baking powder and vanilla, mix well.

Bake for 45 minutes uncovered, then 15 covered with foil. Test with a toothpick.
