Pretzels

 

Ingredients:

Dough:

500g flour (all-purpose)

200g butter

250ml milk

25g yeast (I use dry – 5 tsp)

1 tsp sugar

1 tsp fine salt

Topping:

1 egg

Coarse salt

Seeds (sesame, flax, etc)


Instructions: 

In a bigger bowl put the yeast and sugar, pour 150ml milk and mix 130g flour in. Let it sit for 15 mins.

Pour the rest of the milk, melted butter and salt, mix well. Add remaining flour and knead by hand 7-8 mins.

Let it sit for 15 mins.

Take a little piece of dough, roll it into a rope and twist into pretzel shape, put them in a pan (lined with aluminum foil or parchment), ½ inch apart.

Pre-heat over at 375F, put pretzels in for about 20 mins. Crack egg, mix well yolk and white.

Take them out, paint with the egg then sprinkle with salt and seeds (try to sprinkle as soon as you can as egg tends to solidify quickly on hot pretzels and the salt and seeds will not stick)

Put them back in the oven until they get golden brown (about 10 more mins).
