Copycat KFC Cinnabon Biscuits
Biscuits:
1-1/2 cups flour
1 tsp salt
1 tbsp sugar
1 tbsp baking powder
2/3 cup milk
1/3 cup vegetable shortening
Sift dry ingredients. Make a well and add milk and shortening. Mix together and cut in shortening with hands. Turn over onto well floured surface and knead about 8 times. Bake in 425°F oven for 10-13 minutes until light brown.
Cinnamon glaze:
Melt 1/2 cup sugar and 1/2 cup water over medium heat. Continue until slightly boiling and light brown in color, then turn down to low heat. Add 1/2 stick unsalted butter and 2 tsp cinnamon. Whisk until butter is completely incorporated and you have a slightly runny caramel cinnamon sauce.
Cream cheese frosting:
1 stick softened unsalted butter
4 oz softened cream cheese
1 cup powdered sugar, sifted
1 tsp vanilla extract
1 tsp fresh lemon juice
2 tbsp milk
Cream butter and cream cheese together until light and fluffy. Add powdered sugar 1/2 cups at a time, beating on high between additions. Add vanilla, lemon juice, and milk and beat until creamy and smooth.
Place biscuits on cooking rack with parchment paper underneath. Drizzle and coat biscuits with cinnamon glaze. Allow to slightly cool, about 5 minutes. Drizzle with frosting. Eat immediately.
